Being an apprentice in France means that you are proficient in French. This is why the document is in French only. You'll have to deal with French Social Security, A French State governmental agency, where the official language is French.
Non European students who are enrolled in France for the first time and hold a student residence permit in the form of a long stay student visa combined with the OFII stamp obtained upon arrival , may NOT do an apprenticeship during this first year. They must wait until they renew their residence permit and get their permit in the form of a laminated card before they become eligible for apprenticeship and the APT (see all the FAQs on that specific subject).
